Tacos with a Twist

You want Somethin’ to Taco ‘Bout? Manny and Riley Franco have you covered! That’s the name of their taco truck and they make regular visits to Boulder City to serve up Mexican fusion cuisine that leaves customers wanting more. The great thing about their restaurant is that it’s mobile and it comes to you – or a location near you.

When you hear the words “Mexican fusion” cooking, most people think of some sort of Tex Mex hybrid food, but that’s not what you’ll find at Somethin’ to Taco ‘Bout. We are talking about Chicken Teriyaki Tacos with teriyaki chicken and wonton strips. Or This Luau Piggy Tacos with pulled pork and pineapple. They also serve up taco bowls and nachos with many of the same ingredients. Some of their side dishes include street corn and chips and salsa. Manny, one of the owners and principal cook, is imaginative with the cuisine and often finds himself asking, “Will it taco?” It does!!

on his way to this point in his life, Manny has spent many years in the food and beverage industry, but mostly dealing with the beverage side. prior to moving to Nevada, he owned and operated a bar in Florida. This endeavor came about in October 2021 with the truck hitting the road on December 2021. They keep a schedule HERE and include Boulder City on the schedule regularly (INCLUDING TOMORROW MARCH 30!!). We recently visited them at Eagle Iron Company on Foothill Court, where they were serving up many customers the weekly special. Since opening their truck, they have acquired many repeat customers who follow them from location to location. Manny and Riley hope to one day take this concept and develop a traditional restaurant. If the success of their current menu is any indication, that should be a good move.
